You'll need to play with the calibration for the throttle channel.

If you set it up as zero at center, it'll cut off whenever you pull the stick below center.

While calibrating, pull the stick slightly below center to move the cut-off down a bit. If you pull the stick all the way back during calibration, you can't cut the throttle.
