It's best to use a dual joystick controller of some sort. Many find the $10 dual analog USB joystick works well to start.
You plug the joystick into the computer and then calibrate the joystick within FMS. Under the menu item [Controls] [Analog Control] [Joystick Interface].
For a US RC Controller, the right stick is right/left (aileron) and up/down (elevator), the left stick is right/left (rudder) and throttle (up/down). You map the channels as 1,3,4,2,1,3,4,2. I also check the [Exp] exponential box next to aileron and elevator.
I'll assume you're using the latest version FMS 2.8.5. It works with both older and newer models. Newer models work better on the ground and using the wind settings which is a more advanced topic.
Now, just load up your favorite model, and practice until you can take off, circle the field and land. Then move on up to more advanced manuevers. Start with a trainer plane or heli.
If you don't have a joystick, then you can use the keyboard, however, it's not very satisfying as the controls are quite coarse. Up arrow/down arrow is elevator, right arrow/left arrow is rudder, J and K keys are ailerons, I key initializes, R key hand launches, V = full throttle, H = kill throttle, throttle up = G key, throttle down = B key. One key to good use of the keyboard is to never hold a key down, it's best to tap it to perform a turn. The faster you tap, the more you'll turn. Very clunky though.
Then play around with the other menu items. It's fun!!!
