I am looking to get a simulator to start learning to so some 3D helicopter tricks. How far can I go with FMS? How does it compare to RealFlight G3 (interms of learning to fly - I don't care about graphics)?
I know FMS is free, but I'd still need to plunk down $50 for the interface cable...

As FMS only respond to 4 channels from your Tx, the pitch and throttle are linked together. You will not be able to utilise any throttle or pitch curves from your Tx.
There are also no inputs for Idle up/Flight Modes or autoratations.
